When this is over, if you can get to a Waffle House, I wholeheartedly endorse the waffles—especially pecan— as well as scattered, smothered, covered, peppered, and diced (hash browns with onions, cheese, jalapeños, and tomatoes). I’ve never not enjoyed anything I’ve eaten there in my life, and I’ve had memorable times there. I get a bit emotional about Waffle House, as I think many southerners would. It’s a proudly lowbrow food church, open to all.
