Elderflower fizz update: first tiny timid bubbles forming around the 44th hour mark. Nerding out with a refractometer, getting a 11 degrees Brix, having had roughly added 325g sugar to about 2,5L water.

(don't be fooled that I know what I'm talking about, but I understand one could look at the Brix reading to figure out how much of the sugar has been converted to alcohol)
