Do you do goat cheese? It's the only animal cheese I can eat

@funbreaker I'd LOVE to make goat cheese. Goat milk is hard to come by where I live, but oh bog is it yummy. Have you had any vegan cheeses? I've not myself, but am told they're nice.

They're not quite the same, but they're still pretty decent. The brand I really want to try is Miyoko's Creamery. the cheeses are cultured!

Idle curiousity and nosy question, are you allergic to cows milk?

I'm only lactose intolerant, but it's still really annoying and distruptive, considering the usual symptoms. It's not triggered as badly with non-bovine dairy.

@funbreaker Oof, that's a shame. I'm not too good with dairy myself, but the yogurt I make helps.

Also, my partner has come to accept that I eat things that're bad for me, and she still loves me despite my self-destructive behavior.

@deaduncledave ultrafiltered milk is also a big help, because, it's like Lactaid, big with a lot of the sugar that results from the lactase processing has benn removed so I don't get a mouthful of liquid that tastes like sweetened plastic. I don't know of any cheesemakers that use it though.

@funbreaker Ah, right, I've also heard of twice-fermented cheeses that are frankly a challenge to eat, but apparently friendly to folks with lactose intolerance.

@deaduncledave and that vegan moz will be fun to try making, Daiya's is not up to snuff

@maenad Oh bog, I love cheese so much. SO MUCH. I just bought an honest-to-goodness cheese press and discovered I'm out of culture and can't use it yet. ;_;

@deaduncledave I have only ever made ricotta and while it was delicious it wasn't exactly smooth

@maenad I hear ya. Ricotta is challenging. Feta and Goudas are definitely more my speed at present.

@c25l You may know the term Italian Ice, which is the not-philly term for the same thing. I ate a lot of them last week on vacation. ๐Ÿคค

I'm an amateur baker, currently working on my sourdough and flatbreads now that it's the hot season.

And yeah, I got right sick of the entire lot. Makes me miss LiveJournal in a way.

By being friendly! Which you've already done very well! I think you'll like Mastodon, I'm a fairly new user myself. My wife and I are trying to get into cheesemaking, I'd love to chat about that.

@AWheat Cheers! I'm very much a neophyte, and doing it mostly at the suggestion of my wife, but so far it's fun. The equipment seems to play a big role, including having a strong cheese press. I just got one from New England Cheese company, and am rarin' to use it.

We've been doing reenactment for a while, and we're learning from a guy who specializes in the 1700s method. I want to get a real modern press at some point, because it has to be easier.

@AWheat I was doing the re-enactment method with wicker and some plate-weights I had laying around. PITA so it was. I recommend a dutch press, which is what my friend who knows a helluva lot more about the topic than I uses.

@dave I does, home-made as well. It may be a cliche, but I call it Audrey.

Getting started really depends, but doing a #introductions post is usually good way to start! Just be aware that a good portion of us are pretty techy. But don't worry, there are plenty of non-techs out there. :P
