Hey! Saw a question about DMs on Mastodon.
You make a toot a DM by @-ing people in the toot and selecting the "Direct" under the globe icon.
Admins can't see DMs normally. We could go poking in the DB, but won't. That would be icky.
IMPORTANT: Some servers not running the Mastodon software might not respect DM privacy. You should be fine on the Shop and most of the fediverse, but tread a little carefully.
(FWIW, I trust the DMs I send to other people on the Shop)

If you just have one account on one instance, you may not realize that Mastodon federation -- the means by which toots are sent from instance to instance -- is not instantaneous.
It may be seconds or minutes for a toot to traverse even directly connected instances. This depends on server load and how many messages are in the queue.

This is why your choice of instance matters. Know who your admin is. Check your blocklist. Check the code of conduct.
Not everyone cares about your safety, and no one is really required to.

So the idea of instances reminds me of picking a server for IRC back in the day. I was always on EFnet IRC, but there was DALnet and some others I can't remember.
