Baking Bread!

Raisin and walnut sourdough bread! I was pleased with this one! Someone gave me a new started and I'm off!

recipe couldn't be easier.

100g of starter
400g of flour
250 ml of water
healthy pinch of salt
big handful of raisins
big handful of walnuts, slightly crushed.

I worked them into the dough before rising (I need to find a warmer place to rise dough!) then bake for about 25-30 mins in a fairly hot oven.

@lauraritchie On days when it's a wee cool here, I use the Plate Warming setting on my oven to proof the dough (set as low as it goes, 30ºC).

@dadegroot our min temp is 50, but I'm tempted to put it on for a bit and then turn it off and stick the dough in there. Next on my list is a bread basket for proving! The big plastic bowl I'm using is not ideal ( but works!)

@lauraritchie Which flour did you use?

Baking Bread! recipe

@Defolos the starter is half brown (stone ground wheat) and half strong white bread flour (wheat) and for the loaf I used 250g white and 150g wheat. Made it 'light' brown instead of completely worthy.

@Defolos the white flour is labelled protein 9.1g per 100g I know people who are into bread know what that means - I am afraid I really don't ! I just tend to go for strong flour. The stoneground wheat came straight from a water mill at a traditiional museum and is just in a (10kg) brown paper bag!

@lauraritchie The trick, of course, is finding '100 grams of starter' in the grocery store.
