Every couple days, it dawns on me that I work and do what I do, here. And I still kinda can’t believe that I got this lucky. That it all worked out.
I hope I never lose sight of that.
One of the things I’ve come to love about wok cooking is the fact that it requires my full attention. Distraction delays eating and can ruin the dish.
Or… In the case of 🌶 🌶 🌶 thai food, distracted cooking yields a cloud of capsaicin that results in you coughing up a lung.
(The latter didn’t happen tonight but the prospect of it happening is a good motivator for not fucking up)
