Two Rails libraries which have been on my radar are Lockbox and Blind Index. Between them it’s never been easier to encrypt personal information in a Rails app.
Yes, if your app server gets hosed these libraries don’t help you, but they do give you another layer of protection against SQL injection, your DB server, and backups of your DB.
