@kyzh Age dashi tofu: Firm tofu, in large cubes, blot with paper towels to remove excess moisture, and roll in flour with a little salt. Heat oil very hot and fry, turning to brown all sides (don't turn too soon or they will stick). Place in a puddle of tsuyu. Vegan tsuyu: make a broth with kelp and mushrooms, add a little soy sauce and mirin to get a salty/sweet balance that you like. Top with scallions & grated daikon.
