Excellent! The #InstantPot is also excellent for steaming a wide range of foods and I make my yogurt using a trivet above a cup of water to bring the cream just to a boil on zero minutes of pressure and then I mix it with the starter and set it on the yogurt setting. I have to remember not to plan the IP for supper that night!

I am back to one of the most used books in my bookshelves

Modern Pressure Cooking by Catherine Phipps.

Mostly it is used to check the cooking times for grains, beans and lentils. They have not always been perfect for my Instant Pot, but are a good starting point for me to work out my preferences. I've marked up the changes on those reference pages. Her times are much better than some other well-known/respected resources on the net. She also has a good range of lentils etc covered - other places often don't include the Indian lentils.

She also explains things really well. Like cooking them with salt and a little oil. How to quick soak using the IP. Which added ingredients slow the cooking time.

There are excellent recipes for these as well. Some of her "Pot of Beans" type recipes are very very good.

I love that her recipes are all timed for full natural release. I have found that results are better that way, especially with grains and lentils.

1. Pour-over coffee. I never want to go back to the Keurig!

2. Spotify's shuffle has suddenly decided to venture into unexplored regions of my 2600-song playlist instead of cycling through the same 100 songs. I'm hearing songs I haven't heard in ages or completely forgot that I added.

3. Made #vegan Kung Pao #chickpeas in the #InstantPot for dinner, along with some quinoa, which I cooked using the pot-in-pot method for easier cleanup.

I've made my own dairy yogurt for at least a dozen years now and it's been pretty easy. I'd definitely try to find a DIY method if I couldn't tolerate dairy. For my method, I bring the half-and-half cream to pressure in the #InstantPot and shut it off. I mix some cold cream with the last of my yogurt and add a probiotic capsule before mixing both together and setting it on "yogurt" for about 8 hours. I make it in a heat-resistant bowl that I set on a trivet with a cup of water in the pot.

Ok is my instant pot broken?

I soaked my great northern beans overnight and set them to cook on high for 2min and they are bleeping over cooked!?!! Like total mush.

I'm lazy so I let them sit (no warming) for 1-2 hr after cooking.

I like soaking my beans to reduce undigestible sugars.

Same approach with 3 min cook does ok for garbanzos but they are a bit soft too.

Should I use low pressure?

Popped the accumulated contents of the "all manner of chicken bones" freezer bag in the #InstantPot along with those frozen leek tops I can never manage to just throw away

Added 3 bay leaves and about a tbl black peppercorns crunched up via mortar-n-pestle

45 min. HIGH pressure cook, natural release (hours of KEEP WARM later: "Oh! Right! The chicken stock!")

Drain through mesh strainer.

Cuppa that with about a tsp salt stirred in: Heaven.
