How to make an Italian mad, say that pasta is from Greece (it is ... hahaha!)
I once made a basil risotto with orzo, which was deemed... a curious choice.
@weekend_editor I've done that one multiple occasions! Orzo (or risoni) is totally awesome for making a "fake risotto" (what we call it at home); takes like no time at all.
Last time we did it was made it with lots of Boletus edulis. I might even prefer it over Arborio, Carnaroli rice ... which is expensive, and kinda "meh" (IMHO).
In my case, the diners were Japanese (firm opinions on rice) and Italian (firm opinions on pasta).
I *really* didn't think that through...

But if you call the dish "risotto", you've set up an expectation which is then violated.

I love pesto, I love pasta, orzo is cute... I mean, it's hard to do that wrong.
Now the *context*... yes, one can do that wrong.
