This is helpful. But while I still trust Apple far more than almost everyone else, they have burned a lot of that (and other) trust in more recent years, starting(?) in 2019 when they *did* keep and listen to some recordings of Siri requests without any notice or permission. Plus some related data is getting synced between devices via iCloud, governments can (and do) get iCloud data (at default settings), and the UK government has reportedly demanded a worldwide backdoor.
