@waffles if you're looking for recommendations, consumer SSDs that manage journaling and fsync API implementations in a non-lying way to provide durability guarantees (as opposed to enterprise-grade drives with supercapacitors for power loss protection) are surprisingly uncommon¹.
The WD Red SN700 drives are very much not top of the heap performance-wise, but they are good on thermals and $/TB and they won't waste your time by losing your data. They're what I use.
