Does anyone knows cheap and easy to cook? I want to star eating more but it's a little bit overwhelming the amount of info there is out there. 😅

I know just some basic .

@andresdiaz Omelettes are a pretty good place to start, you can do a lot with an omelette! Google around, you'll find all sorts of recipes. Even just a plain one is nice. Butter, eggs, a bit of milk, and you're away.

@monsterlander Thanks!, yeees, omelette is one of my favorite plates, although I have to be honest by saying I don't usually make those. I'm a little bit lazy and I tend to do a whole mess when I cook.

@andresdiaz Hah yes - I guess we all find the right intersection between tasty and lazy!

@andresdiaz I've been a fan of chopping up onion, cabbage and potatoes, tossing them in some olive oil, and roasting - then serving with a fried egg on top. That's tasty and requires very little intervention.

@monsterlander

That looks easy and tasty to make!, What spices do you use?

Potatoes are one of my favorite food, I'm a big fan of what here in Spain is called "Patatas Bravas", which literaly translates to "Spicy Potatoes"

@andresdiaz Basically none, just put some salt and pepper on. Sure you could get creative though!

@andresdiaz And yeah - if ever I have tapas the patatas bravas are my favourite, they're lovely.

@monsterlander

I will give it a try, thanks for sharing 😋

@andresdiaz I tend to open the oven every 10 minutes or so and give it a little stir so the onion and cabbage get mixed around, otherwise they can start to burn.

@andresdiaz Another thing I often make that's quite easy is this - it doesn't look like much but it's really nice.

Onions & garlic in olive oil and some spices - I tend to use coriander, cumin and paprika - fried until soft then add the spices for a couple of minutes. Then dump in tinned tomatoes and drained chick peas and simmer until thick. Top with some chopped up halloumi.

@monsterlander

That halloumi looks yummy.

I'm actually a big fan of just using one frying pan or bowl, It makes cleaning easier, and this is just perfect for that.

@andresdiaz Yep! Me too. I'm a big fan of spanish omelettes too (I guess just omelettes or tortillas to you?) for the same reason. I sometimes do those by roasting everything and then dumping some Feta on there for the last 10 minutes or so

Maybe stick some asparagus in too, all one pan - yay!

@monsterlander yes to us is tortillas, wao, there are so many things that one could do with just one pan

@andresdiaz yeah - chilli is another great one. I sometimes just use those little packs of microwave rice to go with it rather than making another pan dirty :)

Also with chilli and all these baked omelettes, you can make too much and they are great for the next few days.

@monsterlander

I tend to avoid chilli, I don't handle very good spicy food 😔

@andresdiaz We're the same! I like it to some extent, but my wife and son aren't keen - so I just make it with plenty of Cumin instead. Still lovely / no burn!

@monsterlander

I'm still searching for that balance hahaha.

I just ate, but the picture you just shared made me hungry!

@andresdiaz You can't get cheaper or easier in my book than a salad. Making your own dressings is a great way to control not only calories/fat, but the quality of the ingredients you use. You can add whatever kinds of veggies you like, whatever kind of protein you like. One of my favorites is mixed greens with tomatoes, cucumbers, sliced red onion, red peppers, and a homemade vinaigrette.

@feverspell Thanks Beth!, I tend to buy prepared salads from the supermarket (Like I said, I'm a little bit lazy 🙈), but I'm also trying to go less times per month to the supermarket, so I can focus on my studies and work. And I'm afraid that salads would go bad in that period of time :(

@andresdiaz for a breakfast meal you can try Shakshuka which is relatively easy to cook.
Chop onions and fry them for 1-2 mins to reduce the “spicyness” of the onions.
Add sliced tomatoes or canned tomatoes, let them melt a bit. Reduce the heat.
Add chopped or mashed garlic for the taste and some spinach.
Break the eggs and put it on top.
Cover with the lid and reduce the heat.
Wait until the eggs are cooked on the top side, but try to leave the yolks semi cooked to leave the “juice”.

@andresdiaz forgot to mention to add salt / pepper on the tomato step.
You can also experiment by adding fresh chili, sliced bacon etc.

@andresdiaz If you have bell peppers you can also add them just after the onions

@romankyiv

I just search on the internet for Shakshuka and I got hungry! 🤤

Thanks. I will try this too.

@andresdiaz Fish chowder is simple to make. I use haddock & a small piece of salmon for colour - not sure what fish is fresh in your area.

@SCampbell

I'm in the Mediterranean, so there is a large variety of fish around here, thanks I will check it out. 😊

@andresdiaz Have you considered getting an air fryer? My son bought me one and it has changed the way I eat and helped me make delicious recipes. Here is a site I have come across when I found this recipe for taquitos. I'm checking some of his other air fryer recipes and they look straightforward. masonfit.com/air-fryer-taquito
